Just came across this site in the latest issue of Car Magazine.  They do all sorts of bespoke builds for clients, but it appears they're all (very) expensive.

• Opel Ascona 400R Supercharged
• Audi Quattro UR Short Wheelbase
• 2.1L 16V Mini
• Morris Minor Zetec (!)

Also have been commissioned by McLaren F1 designer Gordon Murray to do a Mk1 Ford Escort, with IRS and a Ford Cossie engine

Also, just for MFX, a Datsun 260Z with Skyline engine and gearbox...
