Can aftermarket tuners adjust throttle position maps ?

Who is a recommend a tuner in Brisbane to talk to.

I have a 957 Cayenne turbo and the changes to throttle position maps between settings annoys me. Will a tuner be able to reset all maps to one map regardless of what mode the car is in ?

 

Or if not, my second choice is

Reset the process of changing the sport mode to be the default on startup each time and edit that throttle position map to be more linear.

 

Third choice

Just change the map in Sport mode
