I think you nailed most of the reasons.

Whilst a notch is rare, it could be argued that it ruins the lines of the pure 356 design, and as we are more used to from 911, building a car to your own vision is almost never a value add proposition.

Its all of the above in my opinion plus what 9er said, its a notchback

In reality, you can recreate this car with approx half the asking price
